Cook the pasta and drain it. Sauté it in a pan over high heat together with the Biagi Sauce. Add a drizzle of extra virgin olive oil and a half ladle of pasta cooking water so the sauce binds best. Continue to sauté the pasta until it reaches the optimum cooking point. Add grated cheese, if desired, only a few moments before serving.
