Used since the Celts, Egyptians and Etruscans, for some thousands of years ago. Interpreted in a work-man-like manner by the master pasta maker, in cooking it gives its gentle scent of machis, fresh hazelnut and cooked aubergine pulp, in the mouth it is crunchy, bread crust, peanut butter and with a light jujube finish . The spelt used is the organic Dicoccum from Umbria.
