Ribolla Gialla - Harvest 2015

After a first fermentation partly in steel and partly in barriques; the 100% ribolla giallo base is refermented in large horizontal autoclaves; a sur lies refinement follows for a period never shorter than 30 lunar cycles. 12 months in the bottle are required to complete the long aging process. Excellent as an aperitif, ribolla brut is a wine for all moments, even for the whole meal if red meats and game are excluded; perfect on fish and shellfish dishes.
