Culaccia is obtained from the most valuable part of the ham. The most evident peculiarity of this product is the presence of the rind: this is necessary for the dry and mild climate of our hill but has the great advantage of leaving the right fat which, combined with a long seasoning, always more than a year, allows Culatta to achieve a unique fragrance. It is not stuffed, has little waste and its shape allows you to always make the same slices from start to finish. It is soft like Prosciutto, sweet and pasty like Culatello.
