The Colatura di Alici from Cetara - Acquapazza Gourmet - is an amber colored liquid that is obtained from the maturation of salted anchovies, whose history has its roots in the deepest food tradition of Campania; is a typical product of the town of Cetara, on the beautiful Costier Amalfitana. The preparation follows an ancient procedure: the anchovies are fished with cianciola, an ancient boat specialized in fishing for blue fish, only in the sea of ​​the Amalfi Coast. Still very fresh, they are cleaned, put in salt for 24 hours and then transferred to chestnut or oak barrels, covered with salt. With the pressure of the weights that are put on the barrels, a very precious liquid emerges which takes the name of the anchovy pouring.
