The Blu del Moncenisio is a blue-veined cheese made with raw alpine cow's milk, aged for 28 to 60 days in quarries and produced on the Moncenisio plateau, the Alpine pass of the Cottian Alps that divides Italy from France. The Blu del Moncenisio is very suitable for use in the preparation of appetizers, salads, souffles and crepes. Superb with a drop of acacia honey and a sweet-tasting red wine.
