"Le Isolane" are the anchovies caught in the Gulf of Trieste and in the Upper Adriatic just in thw period when our sea is full of them. They are then processed in the Isola d'Oro of Grado with simple methods and with genuine ingredients, just like the homemade tradition: the fresh fish is firstly placed in salt. The extra virgin olive oil is then cleaned and stored. A poor fish with delicious flavors especially if tasted with fresh bread and a curl of butter!
